Guji, washed, 250g

A washed Guji from the Uraga area, roasted light enough to keep the bergamot and stone fruit but not so light that it goes sour in a cafetiere at home. We roast it on Tuesday and it goes out the same afternoon, so what arrives is between two and four days off the drum. Bags are flat-bottomed with a tin tie rather than a valve, because the coffee should be drunk in three weeks and a valve encourages people to keep it for three months.

If you are thinking about serving our coffee, come and taste four of them side by side before you commit to anything. It takes an hour and nobody will follow up with a phone call afterwards.
