Guji, washed, 250g

A washed Guji from the Uraga area, roasted light enough to keep the bergamot and stone fruit but not so light that it goes sour in a cafetiere at home. We roast it on Tuesday and it goes out the same afternoon, so what arrives is between two and four days off the drum. Bags are flat-bottomed with a tin tie rather than a valve, because the coffee should be drunk in three weeks and a valve encourages people to keep it for three months.
